Healthy Recipe: Vegan Pumpkin Muffins

Tis the season for all things PUMPKIN! I love the fall just for this reason alone. Recently I've been cooking up alot of my favorites and incorporating pumpkin in the mix. Oatmeal, Stir Fry, and now my favorite muffins. Hope you enjoy this yummy and easy peasy recipe, xo

1 3/4 cups all-purpose flour
1 1/4 cups pure cane sugar
1 tblspn baking powder
1/4 tsp salt
1 tsp ground cinnamon
1/2 tsp groud or freshly grated nutmeg
1/2 ground ginger
1/4 tsp ground allspice
1/8 tsp ground cloves
1 cup pureed pumpkin (fresh or from can)
1/2 cup soy, almond or coconut milk
1/2 cup vegetable oil
2 tblspns molassas
1/4 cup chopped walnuts (optional)
1/4 cup dried cranberries (optional)

Preheat oven to 400 degress F. Line muffin tray with baking cups.

Sift together floud, sugar, baking soda, salt and spices. In a seperate bowl, whish together pumpkin, milk, oil and molasses. Pour wet ingredients into the dry ingredients and mix.

Fill the baking cups 2/3 full. Bake for 18-20 minutes until a toothpick or knife inserted in the center comes out clean.
