Healthy Recipe: Slow Cooker Vegan Chili with Butternut Squash


This super hearty and healthy recipe will surely soothe your soul and satisfy your tummy. Butternut squash is a favorite of mine and is so versatile to cook with. I came up with this easy slow cooker recipe by mashing together a few of my favorite chili recipes. Most excellent with some delicious corn bread too! Enjoy...xo

1 medium onion, diced
1 red or green bell pepper, seeded and diced
14 oz fire roasted diced tomatoes
14 oz kidney beans, drained and rinsed
4 cups butternut squash, peeled and diced
2 cups vegetable broth, low sodium
1 cup corn, fresh or frozen
3 cloves of garlic
2 chipotle peppers in adobo, minced
2 tblspns cumin
1 tblspn chili powder
1 tblspn paprika
1 tsp oregano
salt and pepper to taste

Place all ingredients in your slow cooker and heat on high for 4 hours or low for 8 hours. Garnish with scallions, cilantro or crushed tortilla chips.
