Healthy Recipe : Banana Coconut Chia Seed Pudding



I love this recipe, so simple and healthy! I usually make this for breakfast time when I need something on the go for an energy boost. Chia seeds are very rich in fiber, when combined with water or any liquid substance they swell up causing them to "gel". It is because of this the recipe really works, creating a thick and pudding-like consistency. 

All you need is:

-Blender
-1 cup of Coconut Milk (I like Trader Joe's brand in Vanilla)
-1 Banana
-3 Tablespoons of Chia Seeds


Blend together Coconut Milk and Banana for about a minute. Pour into a bowl and add chia seeds. Mix, then set in the fridge for at least 20 minutes. I like to make this the night before and let it sit overnight. SO YUMMY!!!
